At the unveiling of the Butter Cow at this year’s state fair, Marla Behrands , Diary Building Superintendent introduced a new product mini cheesecakes by a company called That’s so sweet cheesecake bakery out of Lexington, Illinois. “These will be offered in the Dairy Barn,” Marla shared.

Lindsay Bachman owner of the What’s so sweet cheesecake bakery was onhand with Sarah Kelley the head baker and pastry chef. ‘The business started on a whim,” Lindsay said. “I worked at a grain elevator and was the only female. I was always asked to bring in treats.”

After brining in a cheesecake, she said the business expanded from there.

I tried a chocolate mint variation. She even had a treat called maple bacon. When at the fair, take a minute and try this treat in the Dairy Building.
